Like Red Lotus Room’s Shanghai Mermaid, Page Not Found is best known for one of its recurring events: Chaos Cooking, “A continuing social experiment where up to 60 people cook 60 recipes in one kitchen, four burners, one oven. All dishes must be finished in four hours while everyone is drinking wine, socializing, and putting delectable food in their mouths.”

It’s every bit as fun—and delicious—as it sounds. The last time I went, I ate: bacon-wrapped dates stuffed with gorgonzola, pork & Brussels sprout shooters with pickled cauliflower chasers, nachos, Persian-spiced truffles, edamame hummus, tiramisu, beer & cheese soup, winter melon salad, and dozens of other delicacies—all made on the spot, all at once. I made endive stuffed with goat cheese, raisins, and an amazing sauce from the Brooklyn Salsa Company. The event, of which there have been more than twenty in a couple of years, draws all kinds of people, from all ages and demographics, including hipsters, foodies, neighbors, Burners, Couchsurfers, and the generally curious. Everyone is invariably kind and courteous and can’t wait to hear what you’re cooking.

Page Not Found is home to Joe and Margaret and their two cats, Baloney Gabba-Goo and Eddie Tuna Cupcake Mohawk Feather Teddybear Pancake Weezer Haiku (says Margaret: “We usually call her either Pupcake or Fatty Tuna or Haiku”). They used to host some wild parties, but these days they’re more likely to have art shows, modern dance performances, and bands in their space. But Chaos Cooking is still their pride and joy, and they’ve just launched a website to spread the word, and to encourage people to host Chaos Cookings in their own city, town, or backyard.

brooklyn spaces: What made you decide to do this?
Joe: It started out of a longing for that feeling you get when you’re with your family during the holidays and everyone’s in the kitchen cooking at the same time, chatting and gossiping and catching up and laughing and asking each other, “What can I do to help?” It’s just a great feeling. So we tried it once, with eighteen friends, and it was wonderful. I think the second one had twenty-five, and we thought that would be crazy, but it still seemed to work.
Margaret: People kept asking, “Can I bring my friend to the next one?” And we were like, “Next one?”

brooklyn spaces: I first read about Chaos Cooking on Nonsense NYC. What made you decide to open it up to the community?
Joe: We like people, and we figure if someone want to come to an event like this, they’re probably someone we’d like to meet. Nonsense is an amazing list, it kind of changed my life. But listing there was a bit of a controlled experiment, because not everyone’s reading it.

brooklyn spaces: What are some really memorable dishes that people have made?
Margaret: One time Ryan did this seven-day marinated pork. David once made lamb with yogurt-truffle sauce.
Joe: There was this one guy, I wish I could remember his name, who was traveling in India, and there’s a certain type of tea that you can only get on this one mountain there, so he hiked the mountain and picked this tea and brought it back and made this chai concoction that was just amazing, like nothing else I’ve ever had.
Margaret: One time my brother and his girlfriend made chocolate lollipops with Pop Rocks in the middle.
Joe: There was chocolate-covered pomegranate, that was really good. I save all the sign-in sheets, which list what people made. There’s some incredible stuff. Baklava, peaches and pancetta, coconut-curry lentils… What we really like is that the concept is so simple, and people are so self-reliant. The more we got into it, the more we realized that anybody could do this. There are already Chaos Cooking communities that are bigger than the one in New York.
Margaret: There’s one in Winston-Salem, I recently learned. I think they most likely heard about it from the New York Times article that was written about us, or the NPR piece. Theirs seems a little different, more families, with a down-home kind of feel, but it looks like they have a great time.
Joe: Chaos Cooking is an idea that spans gender and age and really any sort of demographic, because everyone loves to cook, and most people love to do it together.
Margaret: Especially with people you don’t know very well. It’s really easy to get to know people through cooking.
Joe: It makes people feel comfortable, and I think one of the things that makes it work is that everyone has something to do and be proud of, something to share and something to receive, and something to talk about. It’s like all social barriers are resolved.

brooklyn spaces: I’m always struck by how calm and kind the vibe is. How did you manage to make these events where everybody’s just happy and wants to talk to each other?
Margaret: Everybody’s eating!
Joe: Yeah, I think that’s the trick. Also, if you’re a complete jerk, you’re probably not going to go to a cooking event.
Margaret: I think if you’re a jerk, you’re probably more of a taker. And if you come to a cooking event, you’re expected to do just as much as everybody else.
Joe: I never thought about that, that’s a really good point. I think you’re right, the people who are drawn to it are givers or contributors. But you’re definitely getting a lot also. You’re eating a lot.

brooklyn spaces: Do you feel like being in Bushwick has anything to do with the way this came about?
Joe: Well, we really like having it here. It’s great when the neighbors come over and cook with us. There’s a Puerto Rican family next door and the mom is really into it. And our neighbor Manny, a middle-aged African American woman, she brought a couple of her girlfriends once and they all cooked with us. I think that’s really cool. There’s a feeling of frontier here in Bushwick, and there’s a little bit of risk. But our neighbors love us, and we love our neighbors. We don’t hold ourselves in. The neighborhood around here is a little rough, but the neighbors are awesome.

Egg & Dart was a social club just off the Brooklyn Navy Yard in Ft. Greene run by Alita and Angie, service-industry veterans who are well connected to the Brooklyn creative scene, regularly bartending at places like the Red Lotus Room and Rubulad, and involved with the fantastic Nonsense NYC. At Egg & Dart, they hosted a slew of events, including weekly poker nights, barbecues, live music, craft parties (bonnet making!), gardening classes (terraria!), gay brunches, film screenings, and more. They collaborated with Flux Factory, Swimming Cities, DJ Sticker Guy, Bonnie Montgomery Trucking, applewood, Alan Lomax Archive, Quince Marcum, and Lamia Design. They closed their doors in the summer of 2012.

The first time I went was for the Rooftop Sprinkler Slushie Hootenany, a potluck barbecue with music sets by the Home for Wayward Drummers. It was a beautiful night and the party was lovely, mellow and relaxed. The few dozen people were of all ages, with a handful of dogs running around underfoot. The music was awesome, the food was great, and everyone was incredibly welcoming.

Q&A with Alita and Angie

brooklyn spaces: How did you pick the name?
Alita: The space used to be a social club, in the seventies, and they had egg-crate foam all over the walls because of the sound. I think it was called the Egg Drop Space, so Egg & Dart came out of that.

brooklyn spaces: What made you decide to start a social club?
Angie: We’ve been talking about it for a really long time, and looking at spaces, and when we found this one, we decided to go for it.
Alita: Angie and I both work in the service industry, and we’re interested in bringing the skills we have from that—like getting people together, and creating a special space and occasion—to meet the amazing weird art projects we work on the rest of the time, and the people involved. I’m a bit of a matchmaker and a people collector, and I love nothing more than introducing some of my favorite people to other favorite people.

brooklyn spaces: Is there a division of labor between the two of you?
Alita: We work really well together. The labor falls kind of naturally between different things that we’re inclined to do. We pretty much do it all together.

brooklyn spaces: What’s your favorite event you’ve done?
Angie: Oh, there have been so many good ones! We get such a great crowd, it’s always really mellow, nice people, very friendly, a very good vibe. I can’t pick a favorite, they’re all so good.

brooklyn spaces: What made you pick this neighborhood?
Angie: Our studio is really close, just a couple blocks down. And I love the neighborhood, I’ve spent a lot of time here. There’s metalworkers over there, our next-door neighbor has a vintage shop; it’s just mechanics and nice people all around. We were lucky to find something here.

brooklyn spaces: What are your goals for the future of the space?
Alita: I’d like to have more people doing more stuff. We have a theatre director coming to look at the space, and we’re trying to find someone to help us book music, and someone to build up the gardens. There’s a lot of possibilities for collaboration.
Angie: We love people who want to work with us, because that makes it more fun. That’s really the point. It’s not just our thing; we like everyone else’s ideas too.

brooklyn spaces: Has anything about doing the space surprised you?
Angie: It’s kind of like an organic thing that changes and goes in different directions, but that’s what makes it fun and interesting. We don’t know who’s going to come to us next!

The guys who make up Arch P&D—Evan, Ian, and Zak—are some of the nicest, hardest-working dudes I have ever met. Not only were they willing to give me an interview and walk-through of their amazing new space way late at night, they actually set up a private art opening for me and Maximus, new works by Andriana Santiago in collaboration with Evan, weeks before the show will be open to the public. The Arch artists hung out with us for hours, bubbling over with excitement and energy and passion, chatting about art and life and skateboarding and bedazzling and pleasant anarchy.

You’ve probably heard of the previous incarnation of Arch, from their big, bright gallery space on Troutman Street in Bushwick, where they held group art shows and indie boutiques, and were a fixture in neighborhood art events like Beat Night and Bushwick Open Studios. But they’ve moved on, with a new space (in Ridgewood, technically), new goals, new ideas, and new synergy. As Evan says, “Arch was started to create a space where artists could get together and share art and skills, to do work that everyone could benefit from in a sustainable manner.” There are eight artists sharing space at the new Arch, and they make every kind of art imaginable, from visual art to commercial art to music to skateboarding to metal and woodwork. Even with so many people, the space is incredibly organized and doesn’t feel cramped; every workstation is built on wheels, so they can clear out the space easily for parties and events. They’ve got a crazy diverse roster of high-profile clients—including Lady Gaga, Dos Equis, Andrew WK, Dance New Amsterdam, and Lindsey Lohan—as well as working with many other underground Brooklyn spaces, like Red Lotus Room and House of Yes. They also throw art salons and parties, have open hours as a gallery, and are open to collaboration and skillsharing.

 

brooklyn spaces: How did you all come together?
Evan: I met Zak doing a job for Dos Equis. We made steampunk party boxes and a steampunk piano for Andrew WK.
Ian: I met Evan through working with Narcissister. He started pulling me onto some jobs, and I pulled him onto some, and it went back and forth for awhile, until we decided that it was silly not to merge into one entity.

brooklyn spaces: So you guys have lots of high-profile clients, individually as well as collectively.
Evan: Everything is collective now. Together we’re doing what one of us could never do alone.
Ian: Everything in the shop is communal, so long as you know what you’re doing and you clean up after yourself. It’s respectfully collective.
Zak: It’s an open exchange of ideas and materials and tools.

brooklyn spaces: How did you pick the name?
Evan: It’s from a project that I did with a massive group of friends for Pier 59’s fifteenth anniversary party. It was for Fashion Week Spring 2010. We designed a massive Roman set, with an arch and columns and blocks, which took every last bit of help from everyone I knew. And it became obvious that the structure of an arch requires every block in the arch to hold it up. Actually, tomorrow we’re going to go and pick up that arch from storage, and we’re going to install it in the House of Yes for the new show, Caligula Maximus. It’s coming full circle.
brooklyn spaces: Where will it go when House of Yes is done with it?
Evan: I don’t know, it might end up at Materials for the Arts.
Zak: Sustainability is a key element for us. Everything we do is going to get reused or given away.

brooklyn spaces: Has Bushwick influenced the space, or Brooklyn in general?
Zak: Bushwick is the pulsating center of art in Brooklyn right now. It’s where everything is happening.
Ian: I think even the way we’ve set up the space, it has a Brooklyn feel. It’s open, there’s no walls between our spaces, everything is there for everyone to see.
Evan: It’s all DIY and scavenged, the windows leak, it’s freezing cold, you’re working in the shop in all your clothes. That’s Brooklyn.
Zak: Survival skills.
Evan: Also it’s really bleak, it’s this post-apocalyptic industrial wasteland.
Zak: In the wintertime you walk out there and it’s like snowfields and dilapidated train tracks and broken-down warehouses, but what’s coming out of here is what people deem some of the most beautiful artistic work in the world. On the outside this building looks like nothing, but inside we’re creating stuff that’s on Fifth Avenue. The juxtaposition is fantastic, it embodies the whole situation.
Andriana: And we’re remaking the neighborhood. It’s just about taking what you have, whatever it is, even if it’s old or dirty, and making it your own and creating your own life. Whatever you want it to be.
Ian: That’s what’s so beautiful about this space, it’s all of our dreams put together, making it into a collective dream.
Evan: I’m gonna cry.

brooklyn spaces: What else is even in this immediate neighborhood? Are there other artists creeping out?
Evan: Oh yeah. There’s a lot of lofts out here that are filled with artists.
Andriana: We’re like roaches.
Zak: Yeah, we come out at night and we’re impossible to get rid of.

brooklyn spaces: Will this space be open to the public like the last one?
Evan: We just recently did a gallery show; obviously this will be an ideal place to have art hanging on a regular basis. We’ve been open to the public for about five events. We’re trying to find where our public presence as a space exists.
Ian: A lot of it comes from opening up the space to other artists. We’re open to helping people who don’t have the space to do larger projects.
Zak: We’ve all been there, having a concept but not the space to realize it. So we’re more than willing to help out other artists with space and materials.

brooklyn spaces: Do any of you want to talk about recent favorite projects that you’ve done?
Evan: We just made a mannequin for Melody Sweets, a burlesque performer. And we did a really nice set at Lincoln Center for Fashion Week for Odd Molly, a Swedish fashion company. And we did a set for Black Nativity Now, an Off-Broadway production by Alfred Preisser. Zak just headed up a project doing two suites for the Lady Gaga concert at Madison Square Garden.
Zak: I also make surfboard fin key necklaces, in a range of metals and finishes, and Lindsey Lohan has taken a liking to them, so I’m getting some calls from her. That speaks to the diversity in the whole situation, we have high-end sets, high-end furniture, high-end jewelry, it’s such a range.

brooklyn spaces: Anything else you want to tell the world?
Zak: Tell them to come by! They’re more than welcome, our doors are always open. Just be friendly. Have a smile on your face and want to be a little bit creative and get your ideas out.
Ian: There’s always a way to make your project happen.
Zak: Yeah, whenever someone says “Is that possible?”, we never say no. It’s always possible. It just takes a little bit of creativity, a little bit of blood, sweat, and tears.
